The Bikini Cocktail

Yields 10 people

For the Citrus Syrup (makes 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar

To make the Drink (yields 850ml, serving 10)

400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch

Directions

Making the Citrus Syrup: Combine all the items into a saucepan, heat until it reaches a light boil, agitating so the sugar melts. After that, take off the stove and leave to cool down entirely. Decant into an sterilised bottle, seal and store chilled, where it will keep for around one month.

Preparing the Batch Mix: Combine every spirits and syrup into a large bottle, allow it to infuse for one hour, then strain , ideally through cheesecloth, making it completely strained.

For serving: Add 85ml of your premix into a cocktail shaker packed with ice, and agitate lightly for a minute to cool it down. Pour into a frosted cocktail glass or similar, decorate with the cranberries and finish using a light spray of mandarin oil over the drink.
